Not simply as a 'spirit-keeper', but as a necromancer who has been conjuring and working with spirits and other entities long before keeping (alongside my work with demons and immortals), I have to say that you really can't limit any relationship to these ideas. What we are talking about is forming a relationship with an other-realm or other-world being.
Spirits, entities, demons are so varied in their stance, position, power, influence - each individual being should be treated as the individual they are. You can and should make an effort as far as groundwork, preparation, comprehension before endeavoring to invite any into your life.
Some spirits are guides, mentors and 'keep us', just like demons may do. Any entity or spirit can take on that role, they have plenty of things to teach us and bestow upon us that we could not access on our own (it's worth noting we can bring the same unique experiences to them). Do not presume spirits are not powerful beings, or that demons are automatically going to take on a mentor role.. all deserve equal respect, and complete openness for what they bring to the table.
I keep spirits which are as powerful as the demons in my keep, but each of my companions is soo distinct that you cannot compare/contrast them either.. and why would you? It's my own belief anyway that no matter who you bring into your life (or who steps in), you're entering into a companionship with them which is personal, unique, and has the potential to be powerfully influential.
It's a responsibility and an investment no matter if spirit, demon or other entity because we are entering into a two-way companionship with an exotic force of nature.
The real distinction I might relate to your question is where each being is operating from. Demons which Priestess Akelta conjures are operating from an exclusively elevated spectrum of dark energy that comes from what she has described as the outer spiritual realm, beyond what is commonly processed by human beings based on where we reside. The demonic intensity along with that frequency is what you are asked to prepare for.
These presences are of a particularly nuanced 'dark energy' spectrum that will really challenge your perspective if you're not already inclined to it (as with anything new and potent we are gifted to make a connection with).
Whereas the spiritual realm of the dead is something all it's own that the average person will be more exposed to energetically. This is why you should take a certain care beyond what you are used to, if endeavoring to connect with the demonic.
However that being said, I want to mention how a relationship with any sort of entity develops - how you adapt - can also depend a lot on who you are, your energetic make-up and what you are inclined to. Some people may not have much of an experience or kinship with spirits (the dead..), some may have inherent affinity to the demonic, some have to work really hard to connect with a concept and others will be rewarded with everything they pursue.
There is much to learn in realizing the whys and hows of what connections make themselves most significant in our lives or in which way they do, based on our respective resonance.
The reality is it comes down to you, and the other being, and should not be generalized..
On that note.. I'm seeing some criticisms of spirit-keeping and grandiose elevation of demon-keeping, as referred to above a lot of comparison.. it's completely misguided as far as I can say. Not because you cannot have grandiose demon experiences, or that spirit keeping has been impactful for everyone, or whatever the instance.
You just cannot generalize what you are going to get out of each relationship or what is bound to be more 'this' way than 'that'. We are each different and each being and frequency we interact with is different. Ultimately if you really want to know about your connection with a type of being, or what it will mean for you, you will have to take the plunge and see what happens. And that's for you, only you.
Don't mean to convolute the inquiry but that's what I have to say about that, and hope it helps.
